Quick Brown Rice Burrittos

Ingredients for Black Beans:

* a can of organic Black Beans
* 1 small Shallot or Onion
* 1 small Clove of Garlic
* 1/2 inch piece of Ginger
* 1 medium Roma Tomato
* 1 leveled teaspoon of Sea Salt
* Ground Black Pepper to taste
* 1/4 teaspoon of Cayenne Pepper
* 1/4 teaspoon of Ground Coriander
* 1/4 teaspoon of Ground Cumin
* 1/4 cup of chopped fresh Cilantro
* 2-3 tablespoons of Extra Virgin Olive Oil

Directions for Black Beans:

1. Saute chopped onions in Extra Virgin Olive Oil until translucent.
2. Add chopped ginger and garlic and saute for a minute more.
3. Add tomato and let it cook for a minute.
4. Drain the black beans can in a strainer and rinse with water for a bit.
5. Add black beans to the pan and add sea salt, black pepper, cayenne pepper, coriander powder, and cumin powder.
6. Mix and place lid and let it simmer for 10 minutes on low heat.
7. Add cilantro and cook for 2 minutes more, then turn it off.

Ingredients for Guacamole:

* 1 ripe Hass Avocado
* 1/4 cup of Chopped Red Onions
* 1/4 cup of Chopped Tomatoes
* 1/4 cup of Chopped Cilantro

Directions for Guacamole:

1. Mash the avocado and then add onions, tomatoes, cilantro, a little bit of lemon or lime, and a teaspoon of cut green hot peppers(if desired).

you can also add Salsa and Sour Cream if you like. Bon Appetite
